My kids say this some times. Then, I try to tell them they don't know anything about unfairness and tell them how some families struggle to get enough to eat.
Just now, Devin said something was not fair. I'm not sure what. Here was Trevor's response.
"You know what's not fair? Some people don't even get enough to eat!"
I wish this meant he really understood just how unfair life is. But, I think he was just repeating what he had heard. From me.

When Brandin was little and would say "That's not fair!" I would tell him that "fair" was a weather condition, and a complexion, and an event held by counties in the fall; and had nothing to do with "circumstances". After a while he got it.

Oh, I like that Jack! I'm going to give that a try.
My mom always used to say something along the lines of, "You're right, it's not. I try my best to make things fair when I can, but there will always be times when I can't, you just have to be a big girl and not roll around on the floor screaming." She still says something along those lines, but she's less worried about me throwing a tantrum.
You're a beautiful mom. Mistakes will be made, and even as such you're stil a fantastic mom!
